Señor Bill’s Guacamole

A huge hit at any family gathering, this one is sure to yield an empty bowl before long. Easy to make, easier to eat. Holy Guacamole!

 3 well ripened, soft avocados
 1 medium onion
 1 medium tomato
 1 small can of green chiles
 1 small bunch of fresh cilantro
 1 tbsp white vinegar
 1 tsp lemon juice
 1 tsp each of salt and pepper

Cut and scoop avocados into a large mixing bowl (remove pits).

Chop onion, and tomato into medium size bits. Finely chop cilantro and add chopped green chilies to mix. Add to avocados.

Add vinegar, salt, and pepper.

Using a potato masher, mash avocado with tomato and onion together until a smooth paste is formed. Add salt to taste.

For spicier guacamole, add 2 - 3 chopped jalapeno peppers to the mix.

NOTE
Be sure avocados are ripe, not too soft (dark spots reveal spoilage) or hard (difficult to mash and not the right color).
