Onion and Cucumber Vinaigrette

Mom made this on special occasions like Thanksgiving, Christmas, and Easter. The recipe originated from her mom, Nellie Scully.

cucumber onion vinaigrette

 2 each - Cucumbers - sliced thin
 1 each - Sweet Onion - sliced thin
 ½ cup White Vinegar
 ¼ cup Water
 2 tbsp Vegetable Oil
 1 tsp Sugar
 ¼ tsp Salt & Pepper to taste

Slice cucumbers and onions and place in a bowl. In another bowl, add 1/2 cup of vinegar, 1/4 cup of water, 2 tablespoons of vegetable oil, 1 teaspoon of sugar (to start), salt & pepper.

Mix all together and taste to adjust (add sugar or water)

Chill for 1 hour and serve.

NOTE:
Add a few ice cubes on top of the served cucumbers and onions to preserve the crispness of the vegetables.
